The idea behind this dessert I owe fully to Michaela Pavlikova, who posted a picture over at my Facebook page. The picture was for a dessert called Caramel Slices. This was the first I had ever heard of this dessert, which I now am completely addicted to. After a quick Google search, I found that this delicious treat has several names. Caramel slice, caramel bites, caramel squares, etc. It consists of a shortbread crust, firm caramel center, and a chocolate topping. I decided to make it a peanut version, but if you are not the biggest fan of the taste you can substitute the peanut butter for either almond, cashew or coconut butter.
Obviously, I wanted to make this in a healthy manner as well as it being vegan and gluten-free. The recipe Michaela linked me to was raw vegan, but it contained oil, sugar and syrup, which is a complete no-no for me. It was however surprisingly easy to modify it, in order to make it healthy. I was not too obsessive about making this fully raw vegan but it can very easily be done so, as long as you buy certified raw ingredients.
