    If you couldn’t tell by now, I’m a sucker for medjool dates and chocolate. No question about it. I was grocery shopping this past weekend with my husband and came across muesli. I thought…what if I combined the muesli, medjool dates, coconut flakes and chocolate?? What would that be like? Well loved ones…it would be awesome. 🙂

    So…what’s in muesli exactly? Well, there’s whole grain rolled oats, wheat, rye, barley, dates, raisins, sunflower seeds, almonds and walnuts. My favorite brand is Bob’s Red Mill. They have a gluten-free version as well which makes it a great choice for those with a gluten allergy. The energy in these comes mainly from the chia seeds. Chia seeds don’t overwhelm this recipe, but it’s enough to get some in your system to feel the natural energy.

    This recipe makes 12 ‘bites’ of deliciousness. I originally only added 1/4 cup of coconut flakes to this but liked the way the coconut tasted so much with the dates and muesli that I decided to add more…too much coconut can’t hurt, right?

    I didn’t want the chocolate to be too structured on these bites. So I basically just took a spatula and drizzled chocolate haphazardly on them…dipping or rolling the bites into chocolate would’ve overwhelmed them with too much sweetness. Wait, did I just say that?! Ha! Ok, back to the chocolate. 🙂 I was happy with just drizzling a bit of chocolate on them.

    These are fun, quick and easy to make. Perfect for a weeknight treat.

    Instructions
    1. In a food processor, combine medjool dates and vanilla extract until smooth.
    2. In a bowl, combine the processed dates, muesli, coconut flakes and chia seeds and mix until well incorporated. Place a piece of wax or parchment paper on a baking sheet and scoop out 12 'bites'. Carefully drizzle the melted chocolate on the bites, making sure not to cover them entirely with chocolate.
    3. Chill in refrigerator for 30 minutes or until chocolate has hardened.
