One thing I thought I might miss when I decided to become a vegan was cakes. With no butter and eggs, the world of cakes seems rather restricted to us vegans, but there are options out there. One of these is this delicious Vegan Gluten Free Carrot Cake.
This cake is nice and simple to make, it only requires one bowl – can’t get much easier than that! Usefully, it also only requires fairly standard ingredients which you are more than likely to have in your cupboards and fridge at home. No need for the last minute trip to the store!
The finished cake is light, fluffy, and retains a nice, moist texture, just like a decent cake should be. One thing I always like on a cake as well is frosting, and I’m happy to report that this cake does not disappoint in this department! If you’re a frosting fanatic like me, you’ll be pleased to know that this recipe doesn’t just have one frosting option, nor does it have two…it doesn’t have three either, or four, or five – in fact, it has SIX frosting options! You should find one that you like – if not, then we may as well all go home now!
