    Vegan Cauliflower BBQ “Wings”

The reason behind the two previous recipes being so very short, was so that it would make way for this amazing dinner recipe. It is inspired by Kristin Louise’s recipe, and right after I saw a picture of it on her Instagram account I knew I had to make my own version of it. So thank you for that Kristin!

Ok, so maybe BBQ wings is not the most season appropriate dish, but holy crackers this was good. I am now absolutely sure that this is what I am going to serve next time I invite my friends over for a vegan dinner. Please do yourself a favor and try this recipe out. It is insanely good, not to mention completely guilt-free.

The reason for this is because I use a homemade BBQ sauce free from any oils and sugars, whole grain gluten-free flour, and baking it instead of deep-frying makes it entirely healthy. Do not be scared by the seemingly long ingredient list, I promise you that it will all be worth it. Once you get the hang of making this, it is relatively quick as well, and can easily be made in less than 45 minutes. I recommend serving this with some fresh raw green veggies, or some kind of low-fat side salad. Trust me when I say that no additional dressings are required, the BBQ sauce and Cashew Cheese dip makes it incredibly juice and perfectly balanced.

    Instructions
    1. Preheat oven to 225 degrees Celsius/450 degrees Fahrenheit. Chop up the cauliflower into medium sized chunks, and place it in a large bowl. In a separate bowl, whisk together the flour, dairy-free milk and garlic powder before pouring it in with the chopped cauliflower.
    2. Spread this out on a baking sheet, and place in the oven for 15-20 minutes. After they have turned a light golden brown, transfer the cauliflower to a bowl and pour over the BBQ sauce, making sure every bit of cauliflower is coated. I did this in two rounds to make sure they were properly covered, and used about 1 1/2 cups of the sauce. Transfer back to the baking tray and bake for an additional 5-10 minutes.
    3. This is best served warm and preferably next to the Cashew Cheese Dip.
