Now, there’s one thing I always try and look for when I’m searching for a new recipe, and that is how easy it is, and also how quick it is. Stir frys normally tick both of these boxes and therefore they are high on my list of “go to” recipes. This recipe for Tofu Vegetable Stir Fry is no exception, and although the list of ingredients is fairly extensive for a stir fry, it’s still really easy to make, and delicious to eat!
I had a Thai takeaway last weekend (a Friday treat!) and I was really disappointed with it – the tofu seems really stodgy and it was just not very nice at all. That’s why with this recipe (and pretty much every time I cook with tofu) I cook the tofu separately to the stir fry and then just add it to the dish right at the end – this way it retains it’s nice, crispy texture and avoids the horrible, soggy, stodgy mess that nobody wants.
