    Super Easy 6 Ingredient Roasted Red Pepper Hummus

    Easy as 1, 2, 3. Seriously. Why buy packaged hummus when you can make it at home for a fraction of the cost? Aaaannnndd…know exactly what is put into it?! For me, I really enjoy making meals from scratch. I love knowing that I’m putting the best ingredients into the food. Also, it’s kind of fun to make something that may seem difficult or time consuming. Case in point – this hummus recipe. Super easy and super healthy for you. Did I mention delicious?? 🙂

    Hummus is great just about anytime. Whether you’re hosting a party and need a quick appetizer or even if you’re just wanting a mid-week snack. Hummus is great with crackers, veggies and even pretzels. One of my favorite ways to use hummus is to use it as a spread on wraps. Just delicious!

    Instructions
    1. In an oven broiler, set to high and place red pepper on a roasting pan. Roast for 5 minutes and then flip. Roast for 5 minutes more or until the pepper is charred black. Remove from broiler and place in a bowl. Cover tightly with plastic wrap and set aside for 10 minutes. After 10 minutes, peel off the charred skin and seeds from the pepper. Remove stem.
    2. In a food processor, combine red pepper, chickpeas, garlic, olive oil and salt. Pulse on high until well combined and smooth.
    3. Optional: Pour extra olive oil on top and sprinkle on paprika.
    4. Service with pretzels, chips, veggies or even as a spread on a wrap.
    5. Enjoy!
