Instructions
  1. Preheat oven to 350 degrees.
  2. Slice nectarines into thin slices, about 16 slices per fruit, set aside.
  3. Prepare flax eggs.
  4. Whisk dry ingredients in a bowl, set aside.
  5. Whisk vegan butter to soften, beat in brown sugar until fully incorporated and fluffy.
  6. Add flax eggs, oil and almond extract and stir to combine.
  7. Fold wet ingredients into dry ingredients until no dry flour remains.
  8. Grease a 9″ springform pan.
  9. Pour cake batter into pan, and spread it out evenly.
  10. Arrange sliced fruit on top of the batter.
  11. Bake in 350 degree oven for 35 to 40 minutes or until a toothpick comes out clean.
  12. Sprinkle with sanding sugar, serve warm or at room temperature.
Recipe Notes

Vanilla extract can be substituted for almond extract.
