To make the faux fried guacamole, simply spoon a small dollop of guacamole onto each pepper wedge and sprinkle with tortilla chips. Garnish with cilantro.
To make the real fried guacamole, place heaping tablespoon-sized dollops of guacamole onto a parchment-lined plate, cover with plastic wrap and freeze for about one hour.
Meanwhile heat oil to 375 and combine the 1 cup of flour, cornstarch, salt and bubbly water in a bowl and whisk to combine. Place the remaining ¼ cup of flour in a small bowl.
To coat the guacamole, first roll each of them in the flour, tapping of excess, then dip into the batter. Dip each guacamole round in the batter a second time, then top with the crushed tortilla chips.
Fry in oil for about 3 minutes, or until golden brown.
Serve immediately, guacamole does not keep longer than about an hour or so.
