Classic Chinese “no-chicken” salad

Instructions
  1. Pulse raw broccoli florets in a food processor until small crumbs form. Set aside.
  2. Combine vinaigrette ingredients in a small dish or jar and mix well to combine. Set aside.
  3. Combine greens, kohlrabi or cabbage & scallions in a large bowl and add ½ of the dressing. Toss lightly to coat evenly, then divide the salad onto two plates/bowls. Top with the baked tofu or tempeh, broccoli, avocado, orange segments, crunchy noodles and sesame seeds. Drizzle more dressing on top and serve.
