Raw Vegan Snickers Ice Cake

    My little sister (the vegan chocoholic) insisted that I posted this recipe, so dutifully I did. This is what we named a “Snickers Ice Cake”. Despite what the name might insinuate it does not contain any ice-cream or such, but it is stored and made using a freezer giving it an icy-taste. The taste however is spot-on like Snickers, and the layering is just like the candy bars. It consists of a bottom chocolate layer, a nougat-peanut layer, a caramel layer and a finishing chocolate layer. Because of it being made in the freezer you have to eat this right after taking it out of there. I therefore recommend cutting them into squares, that way you can easily take one out and eat it while letting the rest stay in the freezer (if you can manage not eating it all at once).

    As I was making this I had some very specific ideas of what kind of ingredients I wanted to use. First of all, I did not want to add in any chocolate (in the form of bars/chips/etc.) and no added oils either. Even though this totally tastes like snickers, the texture of the chocolate is a bit off. Since this is a no-bake recipe and is stored in the freezer (it holds for a LONG amount of time) it does melt slightly when placed in room temperature for too long. So this is not like the Snickers bars you would grab with you when going somewhere, but more as a quickly available treat after a long day of work. It is made the day before it is ready to be eaten, and if you use certified raw ingredients this recipe is completely raw vegan as well!

    Once I figure out how to make something that holds together better and is more like a Snickers candy bar I will upload a separate recipe for that. I think I might have to swallow my pride and use some dark chocolate (vegan of course).

    Instructions
    1. Layer a baking pan thoroughly with plastic wrap, enough to cover all edges and corners. Start by making the Bottom Chocolate Layer, simply by placing all the ingredients in a food-processor and process until completely smooth. If you like your chocolate a bit darker, add in more unsweetened cacao powder. Pour the “chocolate” into the prepared baking dish and, using a spatula, smooth into an even layer. Refrigerate this while making the other layers.
    2. Make the Nougat-Peanut Layer: Again just place all of the ingredients into a food processor Fold in the peanuts, then pour over the bottom chocolate layer. Place this back in the refrigeratrator until the next layer is made.
    3. Make the Caramel Layer: Repeat the exact same steps as above for the Nougat-Peanut layer (just with different ingredient), and pour over the nougat layer.
    4. Make the Top Chocolate Layer: Follow the same directions as for the first layer. When you have the final layer is completely smooth, place the entire baking dish in the freezer for 6-8 hours before taking it out to quickly slice it into squares. Then take it back to the freezer and enjoy a bite every now and then, or if you are serving to other people place a square on each plate and let the actual baking dish with any left-overs stay in the freezer.
