Well, let me tell you, this recipe for Quinoa Stuffed Peppers with Almonds and Mint is amazing!
With this recipe you have to first prepare the quinoa by cooking on the hob and then stuffing the peppers with it and moving them to the oven to bake. One good time to save time if cooking for others is to prepare them the day before, pop into the fridge, and then bake them just before you serve them on the day itself.
This makes an excellent starter or a lunch, and goes fantastically with a side of green beans.
