Wowzers! Who’d have thought that you could make ice cream out of sweet potatoes?! Not me, and when I found this recipe, I was not convinced, but once I’d made it and had my first taste, I was well and truly won over. It’s so easy to make as well, once you’ve baked and mashed the sweet potato, you just pop everything into a blender, whizz it all together and then freeze overnight. Simplicity!
Don’t feel that you have to use almond milk, any kind of non-dairy milk should be fine. You can use any color of sweet potato, but the purple or orange varieties look the most special, and the purple ones seem to have the sweetest taste, which helps in an ice cream.
Purple Sweet Potato Ice Cream Ingredients
- 2 cups purple sweet potato (baked and mashed)
- 2 cups non-dairy milk (almond milk used)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
