Sweet Potato Curry

Now, don’t look at the long list of ingredients that this amazing Peanut Butter Sweet Potato Curry needs and get put off as it is totally worth it! Also, don’t feel that you have to follow the recipe to the absolute letter either, it’s fine to miss out one or two of the less vital things or swap them out for something that you have already in the fridge or cupboard. Despite the long list of ingredients, this dish is actually pretty easy to prepare and cook as it only requires around 10 minutes of prep time and then cooking time is only 25 minutes, so you can be sat down and enjoying the end results in just over 35 minutes or so – quicker than getting a takeaway – and because this is a one pot recipe, there’s not a mountain of washing up left to do either!

Serve this up with rice (maybe try our turmeric coconut ice recipe) or quinoa, and maybe a nice vegan Naan bread for the full experience. Lush!

Sweet Potato CurryPeanut Butter Sweet Potato Curry with Veggies and Peas Ingredients

  • 1 tsp oil
  • 1/2 cup chopped onion
  • 3 cloves of garlic minced
  • 1 inch ginger minced
  • 1 cup cauliflower florets
  • 1/2 bell pepper green or red chopped
  • 1 small sweet potato peeled and cubed
  • 1/2 tsp salt
  • 3 tbsp peanut butter or other nut butter or sun butter to make it nut-free
  • 1 tbsp lime or lemon juice
  • 1 to 2 tsp sugar or maple syrup
  • 1/2 tsp distilled white or apple cider vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper flakes
  • 1 tsp sesame oil
  • 1 cup or more water or use light coconut milk for creamier
  • 1/2 cup peas thawed if frozen
  • black pepper to taste
  • garam masala or curry powder to taste optional
  • lemon juice and cayenne
  • basil and peanuts for garnish
