Oil-free Vegan Baked Tortilla Corn Chips

    My younger sister is addicted to chips. Completely and totally. She eats healthily on the most part, but her three weaknesses has always been chips, white bread and vegan cheese. Her favorite dinner meals have always been taco and pizza, and she is unbelievably good at matching different components together when it comes to these two dishes. Me, on the other hand, generally sucks at making good pizza toppings so I made these chips to use as a topping for my little sister’s Taco Pizza.

    The only fault I made on the first try was that I completely underestimated how much salt I had to add to these chips, so we ended up eating them with a bit of salt on top. Without this they tasted very bland. So please do not try to make this very low-sodium, as it will just ruin the taste. You can of course experiment with adding in different spices, such as maybe some cayenne pepper, chili, cumin, curry powder or oregano. If you do that, you might even be able to get away with using less salt.

    This also tastes amazing next to some homemade spicy salsa or even just a basic houmous. Also, be sure to let me know whether or not you decided to experiment with different spices. I am always looking for new fun ways to serve this!

    Instructions
    1. Preheat the oven to 200 degrees Celcius/390 degrees Fahrenheit. In a bowl mix together the corn meal and water, before spreading the mixture on to a baking sheet. Flatten it using a spatula, getting it as thinly spread as possible, otherwise your chips will not be properly crispy. Drizzle on maldon salt, the amount depending on how salty you want it to be. Since this is a very basic recipe, you can also add whatever additional seasoning you might like. Some ideas would be paprika, cayenne pepper or tumeric. Once you have finished with the spices, place the tray into the warm oven.
    2. Once the chips have been in the oven for about 10-15 minutes, quickly take them out and, using a pizza roller (or a sharp knife), slice the entire thing into triangles.
    3. Transfer them back to the baking sheet and return to the oven until they are crispy, about 20-40 minutes. Remember to flip them around every 10 minutes or so to ensure them getting baked evenly. Let them cool completely before eating.
