As a vegan, you will no doubt be used to being asked “but if you don’t eat meat – how do you get your protein?”. Well, here is an answer that you can use – “Mung Bean Burgers“! These little babies give you around 24g of protein per 100g, so perfect for you if you like to exercise and are therefore concerned that you’re not getting enough protein in your plant based diet.
As with all burgers, you can build it how to like. This recipe uses roasted red peppers, vegan mayo, lettuce and onion, but feel free to omit any of these or replace them with your personal favorites, or whatever you happen to have in the fridge.
You can bake in the oven for 30 minutes, or if you prefer to fry up in a skillet like I did, then that’s entirely up to you. I personally prefer to use a skillet, but that’s just my preference and so I can get the burger just how I like it – if it’s hidden away in the oven, I always seem to leave it too late, or take it out too early!
