    Mosaic Salad Cucumber Dill Dressing

    We call this salad a mosaic salad because it’s composed of different colors and textures of ingredients, arranged in a way that resembles a mosaic. It’s just a more fun way to prepare your salad and to get you excited about eating your veggies. If you put a little more time into making your food visually pleasing, you’ll enjoy eating it more. I promise.

    This cucumber dill dressing is:

    • cool
    • creamy
    • a little tart
    • bright
    • fresh
    • herby

    In this salad, we’ve included:

    • purple kale
    • green kale
    • baby bok choy
    • scallions
    • english cucumber
    • hulled pumpkin seeds

    Of course, use whatever you have on hand – this dressing would be lovely with things like: spinach, lettuce, tomatoes, olives… I also like adding cold quinoa or wild rice to my salads for a more full meal with some extra protein. Some leftover baked tofu is also lovely on this salad.

    Instructions
    1. Combine all dressing ingredients in a food processor and process until smooth, about a minute.
    2. Enjoy dressing on top of your favorite chopped salad ingredients.
    Recipe Notes

    Makes about 1½ cups of dressing. 3 cups of mixed greens plus toppings is enough for an entree salad for one, or two side salads.
