Recipes don’t come much easier than this Mexican Tortilla Roll Ups one. You just need a handful of ingredients, most of which you’ll probably have in your cupboards anyway (houmous, peppers, black eyed peas, etc) – I only had to pop to the store for the tortillas.
Now, I made my slightly different to the recipe – instead of making them small, bite sized pieces, I made mine more like fajitas, i.e. full size, rolled tortillas, with all that fantastic filling. I also used guacamole instead of houmous, but that’s more to do with personal preference – I’m sure that the original recipe would be just as delicious.
