You can’t beat a nice, hearty, family meal – and when it comes to it, Shepherd’s Pie is right at the top of the list. However, a traditional Shepherd’s Pie is obviously not vegan, so that is where this recipe for a Lentil Shepherd’s Pie comes to the rescue! The recipe excludes the traditional lamb, and replaces it with lentils as a yummy vegan alternative. The rest of the recipe is pretty much what you would expect in a Shepherd’s Pie though – carrots, shallots, potatoes (for the topping) – the only ingredient you might be surprised to see is the apple.
As with all big dishes like this, sometimes you will want to make a couple (or maybe one really big one), so the good news here is that it freezes perfectly.
