This creamy Cajun cauliflower pasta recipe is delicious. The creaminess comes from the non-dairy milk that you use, and the author, Vegan Richa, recommends using cashew milk for the creamiest version, so that’s what I used and it worked out really well! It takes around 10 minutes of prep time, so not too bad. The Cajun spices work amazingly in conjunction with the cauliflower and they really bring out the flavors. If you like a bit of spice in your food, then you can use more paprika than the recipe suggests – although I would recommend always erring on the side of caution with this, as I’ve ruined many a dish by being a bit too gung ho on the spice and a bit too little is definitely better than a bit too much!
