What do you get when you mix some tofu, some dark chocolate, and a biscuit base? Answer…a vegan Chocolate Mud Pie Cake (OK, so there are a few more ingredients, but it really is that easy!). Do make sure that the digestive biscuits or graham crackers are vegan as they seem to vary from brand to brand.

There’s not much actual cooking time for this recipe, only around 5-10 mins on the hob and then 10 mins in the oven. You will have to wait for it to chill and set in the fridge for a couple of hours, so this isn’t the recipe for you if you have a chocolate cake urge that needs a quick fix, but if you do have the patience to wait – it is well worth it!

There’s something about having real strawberries on a dessert that makes it look special and extra appealing. You can guarantee that if you bring this pie out at a barbecue or a dinner party, there will be plenty of gasps and positive comments! It just looks sooooo good!

Easy Vegan Chocolate Mud Pie Cake Ingredients

  • 2 cups digestive biscuit (graham cracker) crumbs
  • 3/4 cup vegan butter (I use Pure in UK)
  • 1/4 cup sugar
  • 1/2 cup quick oats (porridge oats)
  • 250g dark chocolate
  • 1½ pack silken tofu (1 pound)
  • 1/4 cup maple syrup
  • 1/4 cup sugar
