Just look at these photos…don’t you feel hungry just by looking at them!? Well, I did, and so I had to make them. These are vegan Double Almond Chocolate Chip Cookies, just make sure that the chocolate chips that you use are vegan and you’re going to be alright.
These are perfect to have tucked away in the cookie jar for a mid afternoon snack, or if you’re feeling naughty in the evening and want a sneaky treat. Yum!
They bake to make a very soft, almost melt in your mouth style of cookie – a style I personally prefer to the harder kind of cookie (think Maryland cookies). There’s no wheat, so they are gluten free, and the almonds that the recipe uses make sure that you’re getting a nice chunk of protein.
