    Cucumber Avocado + Basil Vegan Gazpacho

    This past weekend was pretty busy for us. We worked a full week, enjoyed a wedding rehearsal dinner, celebrated our close friends’ wedding and had a family dinner to celebrate our niece’s 15th birthday. Basically, we were on the go the entire weekend! I’m sure you probably already know that when you have a busy weekend like we had, you don’t really get the chance to make food at home. On Saturday, I had so many errands to run before the wedding that for breakfast I settled for a Starbucks soy flat white and a birthday cake pop. Yes, a cake pop. Come Sunday night, I can feel my body craving the food it normally gets. I need something fresh, green and even raw. I also need something easy to make! This recipe only contains 6 ingredients. Anytime there’s only 6 ingredients, I’m a happy woman. 🙂

    Sooooo…what is a ‘gazpacho’ exactly?? Well, per Google, it’s a Spanish style soup served cold and typically made with tomatoes and other assorted vegetables and spices. Even though the base of this soup doesn’t contain tomatoes, I still consider it a gazpacho since it’s best served cold. 🙂

    Earlier in the week, I stopped at Home Depot and picked up some potted flowers for our front door steps. As I was walking by all of the fresh new blooms, I came across fresh basil. It totally sparked my memory from a few years back when I made a delicious raw cucumber and basil gazpacho.

    You just have to love when you can make an entire meal by putting the ingredients into a blender and pushing one button. These are the kinds of meals I need on Mondays!!

    People ask me all of the time how I only eat plant-based foods. They’re always wondering if I’m getting enough protein or if I’m full enough. Naturally, I always try to respond with the facts but I know there’s still some non-believers. 🙂 The great thing about this soup is that it contains 1 whole avocado. Avocados are made up of healthy fats which do leave you feeling full. Sometimes if I’m really busy and I know I don’t have time for a full meal, I’ll eat an avocado with some lime juice, salt and pepper. It does the trick.

    I hope you love this easy, quick and tasty soup as much as I do. It’s a must-do for a quick, healthy meal!

    1. Add all ingredients into blender.
    2. Blend on high until smooth.
    3. Garnish with fresh basil and pepper
    4. Enjoy!
