A smooth, spreadable, cranberry sauce flavored with pineapple juice.
Cranberry coulis is like grown-up Thanksgiving cranberry sauce. Fresh cranberries are cooked down with some raw sugar and pineapple juice until syrupy, then the sauce is blended and strained to produce a smooth sauce.
This coulis flows well from a squeeze bottle if you feel like making fancy dots and squiggles on your holiday plates.

Combine all ingredients in a small sauce pan and heat over medium high heat until simmering.
Reduce the heat the medium and continue to simmer, stirring occasionally, until the cranberries have burst and the liquid is syrupy, about 15 mins.
Set the mixture aside to cool, then blend until completely smooth.
Pass the coulis through a fine mesh sieve and discard any solids.
