I’ve said it before, and I’ll say it again – a curry is one of the best dishes that the vegan diet gives us (in my opinion anyway!). You get such a variety of flavors and ingredients, that there is always something new for you to try. This Coconut Curry recipe is no exception and it’s delicious. There’s not a vast amount of ingredients that you will need – just your usual curry classics such as onion, curry powder, coconut milk, garlic, etc. It’s really easy to make, basically just cook everything up in a pan – obviously cooking some ingredients before the others (i.e. you start with the onion, ginger, chillies and garlic).
Serve up with a side of rice, and you’ve got yourself a delicious, vegan coconut curry. Enjoy!
