A classic starter course is a soup, and vegans have a decent choice when it comes to this area of cuisine. This recipe for a vegan, low fat, gluten free butternut soup with crispy sage & apple croutons is a real winner – especially in the colder months and during the Holiday season.
The contrasting flavors of the apple and sage against the naturally sweet butternut squash really works well. The recipe is also low fat, with 7g of fat in each serving and 231 calories, so if you’re being a bit fancy and adventurous and having a starter, you needn’t have to feel particularly guilty about it. Phew.
It doesn’t require a great deal of ingredients – things that you may have to buy in are Sherry and the butternut squash, but all of the other items are very common household things – especially in a vegan household.
One other great things about soups, is that you can make a big batch of it, and then freeze the rest in portions which you can defrost and heat up in the future, so I would highly recommend doing this if you are keen on trying this great soup out.
