Black-eyed Pea & Beetroot Salad

I love a nice and quick recipe, and this is one of those cases. It only takes around 5 to 10 minutes to prepare, and as it’s a salad, there’s no cooking, so in 5 minutes or so, you have your delicious meal. Can’t argue with that really! This Black-eyed Pea & Beetroot Salad is not just quick and easy to make though, luckily it is really tasty too. I love beetroot and black-eyed peas, so it was always going to be a winner with me, but I absolutely adore tahini so I knew I was going to love this salad as soon as I found the recipe. The only downside is that I’m now going to have to buy even more tahini as I go through several jars of the stuff a week already with my houmous addiction!

I love the color contrast of this salad too, with the fabulous red of the beets and coated beans going up against the deep greens of the broccoli. This is one gorgeous looking (and tasting) salad. If you fancy a salad this weekend, then I can highly recommend this one.
