These Banana Oatmeal Breakfast Cookies are simply amazing. They’re also very simple to make, requiring only one bowl (not much washing up – yay!) and are vegan (natch) and gluten free. Woop Woop!

These banana oatmeal cookies are super quick to prepare and cook (10 mins and 15 mins), so you’re not going to be slaving away in the kitchen.

The ingredients are easily customized to suit your tastes, what’s in season, or what’s in your cupboards, so you can add your favorite toppings, almonds, raisins, chocolate chips, cranberries, the options are virtually endless.

  • 2 1/4 cups rolled quick oats
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup ground flaxseeds
  • 1/2 cup mashed bananas
  • 1/4 cup organic peanut butter (microwave for 30 seconds)
  • 1/4 cup maple syrup
  • 1/4 cup vegan chocolate chips
  • 1/4 cup raisins
  • 1/4 cup chopped cashews
  • optional: sunflower seeds, cranberries and other nuts
