Avocados have become so popular recently, that there’s even been scare stories in the media about there being an avocado shortage. Us vegans have long known about how good the avocado is, so this rise in popularity has come to us as no surprise. They’re so versatile, high in vitamins and minerals, and also provide us with a substantial amount of healthy monounsaturated fatty acids. They also happen to be delicious!
