This is a great Beetroot and Tofu Burger recipe that the original author came across in a cafe in Queensland, Australia. I can confirm after giving it a tryout here, that it is a fantastic burger recipe, almost good enough to fly to Australia for!
It’s so easy to prepare and cook, you just need to combine all of the ingredients in a big bowl, and then use your hands to make them into patties. You can pop them in the fridge for a couple of hours (if you can wait that long) and then fry them in a medium-hot pan until they are brown on both sides.
You might want to wear gloves for the beetroot bits though as I didn’t and my hands were stained for a day or two afterwards – learn from my fail!
Beetroot and Tofu Burger Ingredients
- 2 cups cooked quinoa
- 1 cup tofu, diced
- 2 cups grated raw beetroot
- 250g cooked Bulgar wheat
- 1 onion, diced
- 200g breadcrumbs
- 150g Dijon mustard
- 4 tbsp liquid sweetener (something thick, like brown rice syrup or agave)
- Salt and pepper
