I love asparagus! It’s so easy to prepare, so quick to cook, so delicious to eat, and so good for you. It’s probably one of my favorite vegetables, if not the number one! This gorgeous Asparagus Quinoa Salad would probably be fine with me if it was just asparagus and quinoa, but the addition of the tangy, citrusy (is that a word?!), vinaigrette dressing just takes it to another level. It works absolutely perfectly with the already almost perfect asparagus.
This recipe is super quick to make, it only really needs about 5 minutes of preparation time and there’s no huge cooking time (20 minutes) and nothing really tricky to do – basically you’re just preparing and baking the asparagus and cooking up the quinoa. The vinaigrette dressing is just a case of popping the ingredients into a jar and giving it all a good shake – easy!
