Remove the core from each apple and slice them very thin (about ⅛-inch thickness), using a sharp knife. Arrange on a plate so that each apple has a good amount of surface exposed. Lightly spritz with the lemon juice.
Melt the peanut butter in a small saucepan along with the date syrup until it is very runny and drizzle it onto the apple slices. Top the apples and peanut butter with the almonds and pecans, and then drizzle with the melted date syrup. Finally, top with unsweetened flaked coconut and cacao nibs.
